Here are a few winter special desserts for diabetes that you can easily prepare and indulge in:

1. Rajgira (amaranth) and oats firnee

You will need

  • Oats (preferable if you can have the rolled oats that you have to soak overnight. Avoid the instant oats as much as you can)
  • Rajgira seeds (also known as amaranth seeds, these are easily available in most local grocery stores as well as online stores)
  • Skimmed milk, you can also opt for dairy-free milk such as almond milk, oats milk, rice milk, and so on
  • Stevia
  • Green elaichi powder or cardamom powder
  • Chopped nuts to garnish

How to make

  • Wash the rajgira seeds properly and soak them in water for at least 30 minutes. Make sure that the seeds are properly covered in water. 
  •  If you are using rolled oats or steel-cut oats that need to be soaked in water, soak them overnight and drain out the water in the morning. Set aside till all the water is drained.
  • Whatever type of oats you are using, take a pan and lightly roast the oats on low to medium flame. You can also use a karchhi and lightly crush the oats.
  • Boil the milk in another pan and add the soaked rajgira seeds to it, and keep boiling on low till the seeds are soft.
  • Now add the crushed oats to the milk and cook.
  • Sprinkle the elaichi powder and the stevia. Cook for some more time. 
  • Remove from heat and garnish with the nuts. 

2. Multigrain atta laddoo

You will need

  • Multigrain or whole wheat atta
  • Stevia  
  • Desi ghee
  • Green elaichi powder or cardamom powder 
  • A mix of seeds such as alsi ke daaney or flax seeds, sunflower seeds, melon seeds
  • Chopped nuts of choice 

How to make 

  • Heat a kadai and add the desi ghee. Let it heat on low flame for some time.
  • Now add the atta and roast it on low flame for about 15 to 20 minutes, till you get the aroma of the roasted atta.
  • Now add in the mix of grains and cook for another 2 to 3 minutes more on a low flame.
  • Add the dates or stevia, the elaichi powder, and the nuts and seeds of choice. Mix them all well and cook for 30 seconds.
  • Let this mixture cool down and turn warm so that you can easily place it in your hand. Remember that it should not turn cold, but has to be warm enough.
  • Divide the mix into small equal portions that you will then use to make the individual laddoos. 
  • Take each portion in the palm of your hand and shape them into laddoos. 

3. Delicious gajar ka halwa

You will need

  • Thickly grated carrots 
  • Low-fat milk
  • A spoon of ghee 
  • Stevia
  • Green elaichi powder or cardamom powder
  • Chopped nuts of your choice  

How to make

  • In a pressure cooker, heat the ghee and add the carrots.
  • Sauté the carrots on a medium flame for about 5 minutes.
  • Now add 3/4th of the milk along with the stevia. Mix them all well and pressure cook on a medium flame for about 2 to 3 whistles.
  • Turn off the flame and let the steam escape on its own. Once the steam is released, open the lid.
  • Now add the remaining milk and the elaichi powder. 
  • Mix everything well and keep cooking and stirring on low to medium flame for about 4 to 5 minutes. 
  • The gajar ka halwa is ready to be eaten. 

4. Chocolate chip cookies

You will need

  • Oats 
  • Almond flour or badaam ka atta (badaam ground into a fine powder form)
  • Baking powder
  • Cocoa powder that is not sweetened
  • Vanilla essence
  • Choice of nuts 
  • Mashed ripe banana 
  • Peanut butter that is not sweetened
  • A dash of salt 
  • Cinnamon or daal cheeni powder 
  • Stevia  (optional)

How to make

  • In a large bowl, mash the banana and add the vanilla essence.
  • Add the rolled oats and the almond powder, along with a dash of salt. 
  • Mix everything together.
  • Melt the peanut butter and add to this mix. Stir everything in well to make sure there are no lumps.
  • Now add the cocoa powder, and if you are using stevia, add it in now.
  • Keep mixing till it all forms a nice and even batter.
  • Now add the daal cheeni powder and the nuts of your choice.
  • Keep the batter aside.
  • Preheat the oven and line the baking tray using parchment or baking paper.
  • Take a scoop of the batter and place it on the paper to make a cookie. Keep repeating till you have enough cookie batter in place.
  • Place this in the oven and bake at about 280 degree Celsius for about 25 minutes. 
  • Once done, remove it from the oven and let it cool down.

6. Raagi and besan barfi

You will need

  • Besan or chickpea flour 
  • Ragi ka atta
  • Desi ghee
  • Green elaichi powder or cardamom powder
  • Stevia
  • Chopped nuts of your choice

How to make 

  • In a kadai, add the desi ghee and let it heat on low flame for about a minute.
  • Add the besan ka atta and the ragi ka atta slowly. Make sure that as you are adding the atta, you keep stirring them constantly at the same time, so that they do not form lumps.
  • Now keep cooking this on low flame for about 20 minutes.
  • Once you start getting the aroma of the roasted atta, add the chopped nuts and mix well. Keep aside some of the chopped nuts to garnish in the end.
  • Now add the stevia or dates, whichever variant you are using, and the elaichi powder. Keep mixing till the mix is nicely cooked.
  • Remove the mix from the heat and place it aside.
  • Place butter paper on a tray and transfer the mix onto it.
  • Garnish with the chopped nuts and cut into pieces as you want. The barfis will be ready to serve. 

7. Brown rice ki kheer

You will need

  • Brown or red rice, washed and soaked in water for at least 2 to 3 hours
  • Skim or low-fat milk, or alternatively, you can use oats milk, rice milk or almond milk
  • Powdered green elaichi or green cardamom powder
  • Stevia 
  • Water 
  • Desi ghee
  • Crushed nuts  

How to make 

  • Brown or red rice takes a longer time to cook as compared to white rice. So, it will be better if you half boil the rice first in a separate utensil before you start preparing this recipe. You can then use the half-boiled rice for the kheer recipe.
  • Take a deep-bottomed pan and add the ghee. Heat this on low to medium flame for about a minute.
  • Now add the elaichi powder, milk, and a little water. Let this heat.
  • As soon as the milk starts to boil, add the stevia or dates and the half-boiled rice and cook this on a medium flame for about 20 to 30 minutes. Depending on the type of rice you are cooking, it may take a little more time for the rice to be completely cooked.
  • Make sure that you keep stirring the mix with a karchhi, so that it does not start to burn at the bottom.
  • Now add the crushed nuts and cook this for another 10 minutes.
  • Remove this from the heat. The kheer is ready to be served nice and warm.  

Tips to keep in mind

While these winter special desserts for diabetes are considered to be safe for your overall diabetes health, do keep in mind the following tips to ensure your diabetes health is fine:

  • When indulging in party foods or winter special desserts for diabetes, try and note down your blood sugar levels at least one or two times more than you usually do, just to see if these foods are causing any changes in your blood sugar levels. Like decreasing portion of roti/rice/bread while indulging in a dessert. 
  • Make sure that you do not miss any appointments with your diabetes healthcare team.
  • Try and use a smaller plate or bowl to have your winter special desserts for diabetes. While these are safe, it is always a good idea to still count your portions.
  • Avoid having a second helping if you can.
